Thursday night = Mexican night

Ok, so this week has been MUCH better than last week.

Phew !

Today, I even managed a big grocery shop,  baked  cupcakes and fajitas were on the menu.

Fajitas are a favourite in our house. I get many a 'best wife' point for cooking fajitas.

I also get asked for my fajita 'recipe'.

So, here they are, my Chicken Fajitas.


First of all, it's important to have a gin & tonic at the ready while cooking.


Salsa :

1/2 red onion
1 medium size chilli
a handful of cherry tomatoes
pinch of salt and pepper
1/4 bunch of coriander - stalks included

Chop all the ingredients roughly, throw into a food processor and chop til blended but not puree.




Guacamole :

1 Avocado
2 gloves of garlic
Juice of one lemon or lime
pinch of salt and pepper

Puree in food processor. Can be hand blended with a fork and some muscles !
The guacamole should be as smooth as possible.


Fajitas :

1 Red Pepper
1 Brown Onion

Thinly slice the pepper and onion.
In a VERY hot pan heat 1/2 tablespoon of vegetable oil.
Reduce the heat and add the pepper and onion.
Slowly saute the vegetables over a low heat.



 Into pan with onion and pepper, add 1 chicken breast sliced thinly.

Cut 1 lemon or lime in half and squeeze juice into pan with chicken.

Saute over a low heat until vegetables are soft, chicken is cooked and whole mix has browned.





Ok. Confession time.
I don't make my own tortillas. I usually buy whichever brand is on special.
The trick tho is to make sure the tortillas are beautifully toasted.

Place the tortillas between two plates and microwave for one minute.
Place one tortilla at a time in a hot, dry frypan.
Once the tortilla has browned and is 'fluffing' up, flip the tortilla and toast the other side.
Repeat with all tortillas. To keep them warm, place tortillas between two plates.




This is a great meal to share.
One bowl of salsa. One bowl of guacamole. One big bowl of chicken mix. One plate of fajitas.

Place a little of each on your tortilla. Wrap it up and enjoy.

    Fajitas is my all time favourite meal...actually anything Mexican is a winner for me (well, except a mexican man ;) ! )
    Now I'm craving smooth guacamole and spicy salsa all wrapped up in warm tortillas - I think I know what we're having for dinner tomorrow night :)
